Shrimps with Marinara Sauce

1 lb large shrimps (18-22)

1 qt water

2 tablespoons olive oil

1/2 cup chopped onion

1 clove garlic, minced

1 1/2 cups italian style peeled plum tomatoes

Garnish

2 tablespoons dry bread crumbs

2 tablespoons grated parmesan cheese

salt

1 bay leaf

1 slice lemon

1/4 cup tomato purée

1/2 teaspoon sugar

1/2 teaspoon dried sweet basil, crumbled

salt & pepper

1 tablespoon parsley, finely chopped

Peel and devein the shrimp. Combine the water, salt to taste, bay leaf, and lemon in a large saucepan. Bring to a boil. Add the shrimp; bring the water to a boil and simmer 3-5 minutes. Drain. Heat the oil in a heavy skillet. Add the onion and garlic and sauté until tender. Break up the tomatoes, and add to the onion and garlic along whit the tomato purée and seasonings. Reduce the heat to low and cook uncovered 20 minutes. Place the shrimp in a lightly greased au gratin dish. Top with the sauce. Combine the bread crumbs, cheese and parsley and sprinkle over the top of the sand sauce. Preheat the oven to 450º F and bake for 10 minutes. MAKES 3 SERVINGS.
