Red Potato Salad

Preparation Time: 40 min. Makes: 8 serving

2 Lbs Red Potatoes,skin on, cooked, drained, cooled,

cut into chunks

3 1 each Sweet peppers, red, yellow, green, diced

2 Celery stalks, diced

1/4 cup Spanish onion, chopped

1 cup Whipped Salad Dressing

1 Garlic clove, minces

2 tbsp Fresh dill, chopped

2 tbsp Balsamic Vinegar

1 tsp Salt

1/2 tsp Black pepper

2 tbsp Green onion, thinly sliced

 

  In a large bowl mix together the peppers, celery, spanish onion, garlic, dill, balsamic vinegar and the whipped salad dressing. Add red potatoes, mix well. Season with salt and pepper. Spoon onto a bed of mixed salad greens and sprinkle with the sliced green onion.
