Capelli Medley With Roasted Tomatoes

4 to 6 cloves garlic, crushed 4 to 6
1 bunch green onions, cut in 1" (2.5 cm) pieces 1
1 tbsp olive oil 15ml
10 Roma tomatoes, diced 10
2 cups frozen kernel corn 500 ml

2 cups frozen cut green beans 500 ml
4 oz low-fat Feta cheese, crumbled 120 g
1 tsp black pepper 5 ml
1/2 12 oz (375 g) pkg capelli (angel hair pasta) 1/2

1. Boil water in a Dutch oven.
2. Toss garlic, green onions, tomatoes and oil in a large uncovered
roasting pan. Roast for 25 to 30 minutes at 400 F (200 C).
Stir occasionally.
3. Meanwhile, cook pasta according to package instructions.
Drain well and set aside.
4. Place corn and green beans in a microwave dish with 1 tbsp (15 ml)
water. Cook on high for approximately 8 minutes*. Drain.
5. When tomato mixture is roasted, toss all ingredients together.

Makes 4 - 2 cup (500 ml) portions. Halves or doubles easily.
Freezes well.

*Microwave cooking times may vary, depending on the wattage of the oven.
