Baked Chicken and Potato
It's important to remove the fatty chicken skin. Roll the chicken
in a store-bought shake-and-bake coating, or sprinkle on this salt-free
and sugar-free coating. Bake the chicken on a rack so the extra drip offs.
Bake in a 350 F oven, or grill on the barbecue.
Chicken Spice Mix
2 teaspoons oregano
1 teaspoon thyme
1 teaspoon paprika
1 teaspoon pepper
1 teaspoon chili
1. Pull all the ingredients into a jar with a tight lid. Mix well.
2. Sprinkle the mixture on the skinless chicken.
Have your potato plain, with 1 teaspoon of butter or margarine, or with 1
tablespoon of light sour cream.
Vegetables that go with this meal are celery, radishes and frozen
mixed vegetables.
